Beans for tacos and nachos


This is recipe I learned from my aunt....super easy and tasty...makes for a quick weekday meal...

you can use store bought refried beans or like me use dry pinto beans..both ways turn out equally good, however using dry pinto beans version is healthier..best way to cook pinto beans is using a pressure cooker...i have used the stove top pressure cooker in past and now I use insta-pot.

Ingredients:

  1. 1 cup dry pinto beans (soak for 8-12 hours )
  2. 1/2 cup tomato salsa (any store bought brand works)
  3. 2 tsp taco seasoning (if you dont have taco seasoning, i just use 1/2 tsp chilly powder and 1 tsp cumin for seasoning)
  4. water as needed


Method:
If you are using instant pot, cook the beans at HIGH Pressure setting for ten minutes
If you are using the stove top cooker, cook the beans for 4-5 whistles.
In both cases I dont really measure the water, but i put water till the beans are completely soaked and little bit more..In instant pot, switch the "keep warm" button off so that the water doesn't dry off when the pressure is getting released.

If using the refried beans: empty the can in a container, add some water to loosen the beans...

add the salsa and taco seasoning, mash the beans...

if you making nachos, you might want the beans little soupy so you can add water till you get a desired consistency..

if you making for tacos, you might want it a little thick, so don't add too much water..



for nachos: I just put the beans on chips, add some cheese, salsa, lettuce, guacamole, sour cream...



for tacos: I put the beans on corn tortilla, add some cheese salsa, lettuce...
sometimes I make some mexican rice using this recipe from Pioneer women blog that goes well on the taco...
