sol kadi / kadhi (kokum kadhi)

I feel I have been fortunate to be exposed to so many cuisines from different part of india since my childhood...this is a delicacy from konkan region of maharashtra. it is made from a sour fruit "kokum" and coconut milk....growing up i had it at my friends' home and loved it..
you can drink it cold or warm, if you like it warm you can add tempering to it as well...i like the cold version of it so I dont do the tempering..

the only difference is I use ready made coconut milk. Make sure to stir the coconut milk so that the thick portion is not separated from the water part.


Ingredients:
  1. 8-10 kokum pieces (use wet kokum ONLY)
  2. 1 cup coconut milk
  3. 1 small green chilly
  4. 1 small garlic clove
  5. 2.5 cups water
  6. 1/2 tsp salt
  7. 1/2 tsp cumin powder
  8. 1/2 tsp sugar
  9. 1/2 tsp black salt
Method:
  • heat the kokum and 1 cup water till water boils..switch off the gas, mash the kokum in water
  • once the water cools drain the water thru a sieve so the kokum pieces and water are separated, make sure to press the kokum as much as possible and get all the kokum water you can get
  • take some coconut milk, and blend it in the garlic and green chilly...
  • pass the coconut milk thru the sieve into the kokum water
  • add rest of the coconut milk to the kokum water and add the rest 1.5 cups of water..
  • add all the spices, cool it in fridge for a couple hours before serving...
  • garnish with cilantro
  • enjoy with rice or just as a cooling drink with your food :)
NOTE:
Make this couple hours before serving, that way all the spices mix up and flavor is enhanced..
this recipe can be easily doubled if you wish to use an entire can of coconut milk for this drink
(i can coconut milk is little bit more than 2 cups of coconut milk)
