lentil soup


Lentils are a huge part of indian cuisine and every region in india has their recipes for making lentils. Lentil soup generally are called DAL in north india and gujarat where I am from. The reason I am calling todays post lentil soup and not dal is because this is not a traditional indian recipe. I have tasted lentil soups in restaurants and the basic variation with indian recipe is it has very few spices and some veggies. Some indian recipes also call for veggies in dals but most dont. So after checking out a few youtube videos and looking over few recipes online, this is the version I made at home and this was a hit with my family :)

Very easy to make, I think this be easily made as a one pot recipe or slow cooker recipe.

Ingredients:
1 cup brown lentil (whole masoor) cooked in pressure cooker
3-4 baby carrot
1/2 bell pepper
1 tomato
1/2 green chilly
1 onion (optional)
2 cloves of garlic (optional)
1 tsp cumin
1 bay leaf
1.5 tsp smoked paprika (or red chilly powder)
some pepper
salt to taste
1 tbsp oil

Method:
  • I cooked masoor in pressure cooker adding some extra water than usual as I wanted broth for soup. I added some salt to masoor as well.
  • Also masoor cooks well without having to soak it, i cook till 4-5 whistles for well cooked masoor.
  • As the dal is cooking on other side, take some oil in a pan, add cumin, once it is browned add, bay leaf and green chilly then add garlic and onion, 
  • once onion is translucent add chopped veggies and salt, saute till slightly soft.
  • Once the dal is cooked, add the veggies to the dal and simmer the dal with veggies for 15-20 min.
  • enjoy this wholesome soup with bread or quinoa.
