this is recipe from one of the cookbooks given to me by karthik.......n yes he guided me thru the steps of making it over the weekend wen i was at work...so thanks to him, i made this very tasty dish i never i cud make :)...its quite simple considering the amazing taste!!!!!!! took me an hour to make...so for a novice i think it was good...n its gonna take u even less time m sure...try it...its amazing :)
Method : cook and drain the lasagna sheets as per instructions on the packetsprinkle salt on eggplant, let it stand for 10 -15 min. rinse of excess salt & dry the slices of eggplant, apply olive oil and saute the eggplant till brown on both sides. keep it aside on plate.
ingredients :
1 medium size onion (finely chopped)
8 ounces mushrooms (sliced)1 can pasta sauce (26 ounces)
8 ounces lasagna sheets (cooked and drained)
1 small eggplant (sliced in 1/2 inch rounds)
8 ounces cheddar cheese
8 ounces monterey jack cheese
1 teaspoon dried basil
1 teaspoon dried oregano
2 tablespoon olive oil (if u dont have olive oil any cooking oil will do)
salt to taste.

take 2 tablespoon oil in pan and saute mushroom and onion till they soften. once they are soft put in can of pasta sauce ,basil and oregano and allow it to cook for ten min, keep aside.
mix both the cheese in a bowl and keep aside
In a baking tray, grease the tray with butter, put a layer of 1/3 pasta sauce,1/3 lasagna noodles,1/3 eggplant,1/3 cheese, repeat the entire sequence 3 times (i made only 2 layers as the pan was too big)...bake in oven at 300 degrees for ten min...NJOY!!!!!!!!!!!!!!!
