kadhi..

this one is for u chitra....i am sorry putting up this recipe almost 2 months after you requested it...but better late than never na :)

i am putting up punjabi kadhi and not gujrati kadhi....

ingredients:
for kadhi:
  1. 1 bowl of curd
  2. 2 tablespoon besan (chick pea flour)
  3. chilly ginger paste
  4. chilly powder, turmeric powder and salt to taste
for tadka:
  1. 1 tablespoon oil
  2. one dried whole chilly
  3. 2 or 3 cloves garlic (crushed/ finely chopped)
  4. rye (mustard seeds)
  5. jeera seeds (cumin seeds)
  6. kadhi patta (curry leaves)
  7. methi seeds (fenugreek seeds)
procedure:
for kadhi
  1. add a glass of water to curd and make buttermilk.
  2. add the chick pea flour to the buttermilk along with red chilly powder, chilly ginger paste, turmeric powder and salt
  3. cook the kadhi on medium flame for ten min.
for tadka:
  1. take oil in a small vessel and heat it on medium flame.
  2. once its heated add mustard seeds, mustard seeds will begin to crackle soon if the oil is heated else it might take some time, wait till all of the crackling is over.
  3. add cumin seeds, fenugreek seeds, dried chilly, curry leaves, crushed garlic in quick succession.
  4. once u feel garlic has turned light brown add this entire mixture to the kadhi which is getting cooked simultaneously on the other flame.
  5. wait till it boils, then your kadhi is ready to be served.
the masala in tadka will be tasty even if a couple of ingredients r missing....i have listed every possible ingredient that can be put and which we routinely put...but if one or two of them r missing, dont worry, go ahead n make the kadhi it will turn out well :)
